What It Is
Principe Cerami is the gourmet restaurant of the San Domenico Palace, the Four Seasons hotel carved out of the former 14th-century Dominican convent. Chef Massimo Mantarro, originally from Trabia (PA), has been at the helm since 2003 and earned the Michelin star in 2023.
The cooking is contemporary Sicilian: local raw ingredients — the day's fish, Catania citrus, Bronte pistachio — worked with modern techniques. The menu changes every ten days. A cellar of over 1,000 labels curated by sommelier Alessandro Malfitana.
