What It Is

St. George is the restaurant of the Ashbee Hotel, an early-20th-century Liberty villa on the eastern edge of the old town. German chef Heinz Beck — three Michelin stars at La Pergola in Rome — has brought his name and his vision here, entrusted day to day to resident chef Salvatore Iuliano, Calabrian by birth.

The cooking fuses Beck's technical precision with Iuliano's Mediterranean instinct: carefully worked raw fish, fresh pasta, Sicilian ingredients treated with a light hand. Two Michelin stars in the current guide.
